1. The Brief: Reduce waste across university estate
A growing, 3 campus university contacted Venners Consulting seeking help with an assessment of stock controls across the estate. The university controlled a large number of catering outlets and had a sense that stock was poorly controlled, and waste was running at a high level.
2. The Setup: Inspections pinpoint weaknesses in controls
Over two visits the consultancy team visited all the outlets and reported on a number of concerns. Many of the stock and revenue reporting practices had failed and the fast growth of the university had caused stock controls to weaken.
3. The Outcomes: Training and auditing
The consultancy team were able to provide a table of recommendations, create an action plan and introduce a standard set of reports and operational practices across the estate. Practical steps were taken to assist with the training of staff in the use of a newly installed stock management system.
To assist with enforcing standards of stock control and reporting compliance, an audit was introduced and assessed bi-monthly over a year. The audit was rolled out and completed by the Venners Compliance team starting with a training session for all unit managers to ensure they were aware of standards required and key control tips to help ‘beat the audit’.
4. The Results: Culture of waste tackled
The culture of waste has been tackled thanks to enforced waste reporting and costing. Standards of stock control have reduced spoilage waste and understanding of the management systems has increased.
On site, the management asked our compliance team to also monitor key elements of their security controls, offering them reassurance through regular monitoring.
